Coffee and Dates Cookie

Benefits: High in fibre from dates and almonds, which supports digestion and gut health, while also providing moderate protein from eggs and almonds to help with satiety and muscle support. They’re a more gut-friendly, nutrient-dense alternative to typical cookies, especially being gluten- and dairy-free.

Method

    First take the pip out the dates and soak in the coffee (for at least 10 mins.)

    Blend until smooth and you have a gorgeous date and coffee paste. Set aside.

    Chop 50g of dark chocolate. Set aside.

  4. 4

    In a bowl mix 100g of ground almonds, add one egg, tahini and baking powder. Mix.

    Add the date paste. Mix and shape into either 6 cookies or 12 mini cookies.

    Sprinkle with some sea salt and bake in a preheated oven 180C for 12 minutes. Let cool and enjoy.
